The Premier Cru appellation was only awarded to certain localities in Monthélie in 2006, our vineyard in the small quarry called Champs Fulliot among them. This little-known wine is in all respects comparable to Volnay wines, which share the same morphological and geological influences. Les Champs Fulliot deliver wines of very high quality, certainly the most seductive of this appellation. They can be found to the east of the village next to an enclosure wall that completely surrounds the parcel, which gives it the name Clos Les Champs (enclosed fields) Fulliot.

The vineyards of MJ TRICOT are entrusted to the house of Bouchard Père et Fils, providing the extensive expertise of its winemakers and cellar master to create products of excellence.

  • Harvest:manual, in small 13 kg boxes; careful manual sorting of each cluster.
  • Vinification : after partial or total destemming depending on the vintage, fermentation in small containers and gentle pressing ensure optimal vinification. Depending on the profile of the vintage, vatting can last from 15 to 18 days.
  • Maturing: : 12 to 14 months in French oak barrels, using 25 to 35% new barrels.
  • Ageing : in the cellars of the ancient Beaune castle, that provide natural conditions perfectly suited to the Premiers Crus.
  • Tasting note: complex bouquet of small red fruit. Fragrant on the palate, expressing charm, finesse and elegance.
  • Food pairing : poultry, game birds (quail, pigeon, etc.)
  • Serving temperature : between 17 °C and 18 °C
