‘Perrières’ evokes the stony soil on which the vines of this exceptional climat are firmly rooted. This Premier Cru has a high minerality and is particularly appreciated for its finesse and purity. In the middle of the 19th century, the oenologist Mr de Vergnette stated: ‘apart from the true Montrachets, I know of no other white wine so exquisite.’ In his 1855 classification, Dr Lavalle would report it as ‘best of the cuvees’.

The vineyards of MJ TRICOT are entrusted to the house of Bouchard Père et Fils, providing the extensive expertise of its winemakers and cellar master to create products of excellence.

  • Harvest : manual, in small 13 kg boxes; careful manual sorting of each cluster.
  • Vinification : pressing in two phases – evacuation of the first juices, then pressing in two-hour cycles.
  • Maturing : 10 to 12 months in French oak barrels, using 15% new barrels.
  • Ageing : in the cellars of the ancient Beaune castle, that provide natural conditions perfectly suited to the Premiers Crus.
  • Food pairing : complex bouquet with notes of flowers mixed with delicate hints of wood. Full-bodied and subtle at the same time, it reveals a lot of personality on the palate. Its marked finish lends it a high degree of freshness, a sign of good ageing potential.
  • Food pairing : fish and seafood, creamy poultry, foie gras, cheese.
